Dr Chris van Tulleken has been at the forefront of the fight to change the food system and better sell ultra-processed foods (UPF). This year he will deliver the Royal Institution Christmas Lectures, Britain’s most prestigious public education lectures, in which he will explore how food fundamentally shapes human development, the importance of our microbiome – just as we did not outside the organ. we had to know – and how we all eat better in the future for our health and the health of the planet.
Nicola Davis sat down with Van Tulleken to discuss her lessons, the challenge of understanding the impact of UPFs on our health, and her last Christmas dinner. Madeleine Finlay hears from them both in this special Christmas edition of Science Weekly
